Avocado and black beans stack this fajita bowl with potassium, the mineral tied to lower blood pressure in WHO-commissioned meta-analyses, while charred peppers, red onion, tomatoes and garlic carry the polyphenol side.

Potassium is one of the least glamorous and best supported nutrients in the blood-pressure literature. A WHO-commissioned systematic review and meta-analysis (BMJ, 2013) found that higher potassium intake lowered blood pressure in people with hypertension and was associated with 24 percent lower stroke risk — and unlike most single-nutrient stories, the whole-diet version has been tested directly: the DASH randomized trial (The New England Journal of Medicine, 1997) showed a potassium-rich dietary pattern lowered systolic pressure by 5.5 mmHg versus a control diet, in three weeks, without changing salt or weight. An avocado-and-black-bean bowl like this one delivers roughly 1,500 mg of potassium per serving, a meaningful share of the intakes those studies examined.
The supporting cast is more speculative, and worth stating plainly. Garlic has a meta-analysis (BMC Cardiovascular Disorders, 2008) showing blood-pressure reductions concentrated in hypertensive participants. For the red onion's quercetin, a systematic review of randomized trials (Nutrition Reviews, 2020) found blood-pressure effects mainly at supplemental doses of 500 mg a day — an amount no reasonable person gets from onions. And the tomatoes' lycopene has intervention-trial support for lipids and endothelial function (Atherosclerosis, 2017), mostly from cooked tomato products rather than fresh pico.
Avocado and black beans are the potassium anchors, with the beans adding fermentable fiber. Bell peppers pile on vitamin C and carotenoids; charring them costs little. Garlic goes in crushed and rested so allicin actually forms before the heat arrives. Red onion contributes quercetin, concentrated in the outer layers, and ripe tomatoes plus lime finish the bowl with lycopene and acidity. Chicken thighs keep it a dinner rather than a garnish plate.

Serves 4. Everything but the avocado keeps well for lunches; cut that fresh, for reasons every avocado owner knows.
