This recipe is really a lesson in seasoning. The DASH trial showed that changing the whole dietary pattern lowers blood pressure meaningfully (New England Journal of Medicine, 1997), and within that pattern the balance between sodium and potassium is the part a cook actually controls. Cod is the ideal place to practice, because it is lean and mild and has nowhere to hide. Take the salt away and you have to build flavor from herbs, garlic, citrus zest, smoke and heat instead — and once you can do that with white fish you can do it with anything. Cod also contributes some marine omega-3, though considerably less than oily fish like salmon or sardines.
Every element here replaces something salt would normally do. Parsley and dill give the green, savory top note; grated garlic adds pungency; lemon zest carries aroma without acidity, while the juice squeezed at the table supplies the acidity that makes unsalted food taste finished rather than flat. Smoked paprika stands in for the savory depth you would otherwise get from salt or something cured. The cherry tomatoes roasting alongside collapse into a sweet-sour pan sauce and bring potassium of their own, which is the other half of the sodium-potassium balance.

Cooking like this at home is where sodium reduction actually happens, because most dietary sodium comes from packaged food and restaurant meals rather than the shaker on the table. Pat the cod thoroughly dry so the herb paste grips it, chop the herbs finely, and pull the fish out as soon as it flakes — twelve to fifteen minutes is usually enough. Squeeze the lemon at the table, not in the oven.
