Rainbow trout is the overlooked oily fish: farmed responsibly, usually cheaper than salmon, and comparable for EPA and DHA. What those fatty acids do for you depends heavily on which trial you read. Purified high-dose EPA cut cardiovascular events by a quarter in statin-treated patients with high triglycerides in REDUCE-IT (New England Journal of Medicine, 2019), while ordinary-dose fish oil in generally healthy adults did nothing significant to the primary endpoints of VITAL (New England Journal of Medicine, 2019). A pooled analysis spanning dietary and supplement studies landed somewhere unsatisfying in between (Annals of Internal Medicine, 2014). None of these tested dinner; the observational case for simply eating fish twice a week has survived every one of them.
The trout's rosy color is astaxanthin, the same carotenoid that pigments wild salmon — a legitimately potent antioxidant in laboratory assays whose human outcome data remain preliminary, so it rides along here as color, not claim. The almonds and green beans carry magnesium, and magnesium supplementation modestly lowered blood pressure in a meta-analysis of 34 randomized trials (Hypertension, 2016); nut eaters more broadly showed lower all-cause mortality at about a handful a day in a dose-response meta-analysis (BMC Medicine, 2016), observational but remarkably consistent.
Rainbow trout cooks in minutes and delivers the EPA-DHA payload with astaxanthin in tow. Sliced almonds, toasted in the pan drippings, add magnesium, vitamin E, and the crunch that defines almondine. Green beans, blistered hard rather than boiled, keep their own magnesium and folate out of the cooking water. Shallots sweeten the pan sauce, and lemon plus parsley finish it the way the French bistro canon insists.
