Oyster mushrooms are what mushroom researchers reach for when they want ergothioneine on a budget — among cultivated species only a few match them. Whether that matters for long-term health is still an open question answered mostly with epidemiology: a systematic review and meta-analysis of observational studies found that people eating the most mushrooms had roughly a third lower cancer risk than those eating the least (Advances in Nutrition, 2021). That is a striking number carried entirely by food-frequency questionnaires and the confounding they invite, so read it as a reason to cook mushrooms often, not as a protective guarantee.
The supporting cast is better tested. Cooked tomatoes — the base of any decent salsa roja — are the main dietary source of lycopene, and a meta-analysis of intervention studies found tomato products and lycopene modestly improved LDL cholesterol, blood pressure and endothelial function (Atherosclerosis, 2017). Avocado earns its place through potassium: a systematic review for the WHO tied higher potassium intake to lower blood pressure and lower stroke risk (BMJ, 2013). And the garlic rubbed into the mushrooms carries a meta-analysis of its own for blood pressure in hypertensive adults (Journal of Nutrition, 2016), albeit at extract doses no taco reaches.
Oyster mushrooms shred into meaty ribbons and take on real char, which is where the ergothioneine travels — the compound tolerates heat well. Garlic, crushed and rested before it hits the hot pan, brings the allicin. Salsa roja made from cooked tomatoes delivers lycopene in its most absorbable form, especially alongside the fat from the avocado, which also carries the potassium. Corn tortillas, lime and cilantro keep the whole thing tasting like a taco night rather than a nutrition plan.
