Pumpkin seeds are among the most concentrated food sources of both zinc and magnesium, which makes green pipián — the Mexican sauce built on a full cup of ground pepitas — an unusually mineral-dense way to serve chicken. The zinc evidence worth knowing about comes mostly from supplements, though. A Cochrane review of randomized trials (Cochrane Database of Systematic Reviews, 2011) concluded that zinc taken within 24 hours of the first symptoms shortened colds, and a later meta-analysis (JRSM Open, 2017) estimated roughly a one-third reduction in cold duration with high-dose zinc acetate or gluconate lozenges. Those are pharmacological doses dissolved in the mouth, not a dinner; food-level zinc supports baseline immune function rather than treating anything, and it matters most if you were low to begin with.

The supporting cast has its own literature. An updated meta-analysis and review of garlic trials (The Journal of Nutrition, 2016) reported lower blood pressure in hypertensive participants along with signals of stimulated immune-cell activity, mostly from aged-garlic extracts rather than fresh cloves. And a meta-analysis of randomized magnesium trials (Hypertension, 2016) found blood-pressure reductions of about 2 mmHg — real, modest, and easiest to interpret as correcting insufficiency. The honest summary: no single meal boosts immunity, but this one quietly covers two minerals that national surveys suggest many adults under-consume.

Why this works

Pumpkin seeds do double duty, delivering roughly 2 mg of zinc and 150 mg of magnesium per ounce — and here they are the body of the sauce, not a garnish. Chicken thighs add more zinc; dark meat carries about twice what breast does, plus richness that survives a simmer. Garlic contributes allicin, the sulfur compound that forms when cloves are crushed and rested before cooking. Tomatillos, serrano chiles, and cilantro keep the sauce bright and add vitamin C, and corn tortillas are the traditional whole-grain vehicle.

How to make it

  1. Toast 1 cup raw pepitas in a dry skillet over medium heat, stirring, until they puff and start to pop, 3–4 minutes. Set 2 tablespoons aside for garnish.
  2. Simmer 1 lb husked tomatillos, 2 serranos, half a white onion, and 3 crushed garlic cloves (rested 10 minutes) in water until the tomatillos turn olive-green, about 8 minutes; drain.
  3. Blend the vegetables with the pepitas, a large handful of cilantro, 1 teaspoon salt, and 1 cup chicken broth until completely smooth.
  4. Season and brown 2 lb bone-in chicken thighs in a Dutch oven; remove them, pour off all but a film of fat, then fry the sauce in the drippings, stirring, until it thickens and darkens a shade, about 5 minutes.
  5. Return the chicken, add broth to loosen, cover, and simmer gently for 25 minutes, until cooked through and tender.

Serve with warm corn tortillas, showered with the reserved pepitas and more cilantro. Serves 4.
