Flank steak brings zinc and dietary creatine, quick-cooked broccoli brings glucoraphanin, and ginger rounds out a stir-fry whose individual parts are far better studied than the whole.

Beef earns its place here twice over. It is one of the best-absorbed zinc sources in the food supply — relevant because a meta-analysis of randomized trials found zinc shortened colds when started early (CMAJ, 2012), though those trials used lozenges at doses no dinner reaches. Beef is also the classic dietary source of creatine, whose supplement literature is unusually solid: the International Society of Sports Nutrition's position stand concluded creatine is safe and effective for strength and lean-mass gains, with growing interest in aging muscle and brain outcomes (Journal of the International Society of Sports Nutrition, 2017). A 200 g portion of steak supplies well under a gram — the studied doses are three to five grams — so file beef under contribution, not protocol.
Broccoli carries glucoraphanin, the precursor that becomes sulforaphane when plant cells are damaged and the enzyme myrosinase gets to work. The founding observation is one of nutrition science's most cited: broccoli — and especially its sprouts — is an exceptionally rich source of inducers of the body's own detoxification enzymes (PNAS, 1997). Most sulforaphane trials since have used extracts, and hard clinical endpoints remain unproven. Ginger is broadly studied at culinary-adjacent doses: a review of 109 randomized trials (Nutrients, 2020) found its most consistent effects on nausea, with modest metabolic signals elsewhere.
Flank steak, sliced thin against the grain and seared hard, delivers the zinc and creatine with the least chew. Broccoli goes in hot and fast — brief cooking preserves more myrosinase activity than a long boil, which favors sulforaphane formation, a mechanism worth exploiting even if no stir-fry trial exists. Fresh ginger and garlic bring gingerols and allicin precursors respectively; add the garlic late so it does not scorch. Tamari seasons the sauce, and toasted sesame seeds finish it with crunch plus a little lignan chemistry of their own.

Serves 3–4 over steamed rice. Everything after the broccoli takes five minutes, so have the sauce mixed before the wok gets hot.
