Buckwheat, edamame, and sesame are three of the more magnesium-dense things in a grocery store, which makes this chilled soba bowl a stealth mineral-delivery system. The magnesium evidence is observational but strikingly consistent: a dose-response meta-analysis of prospective cohorts (BMC Medicine, 2016) associated each extra 100 mg per day of dietary magnesium with lower risks of stroke, heart failure, type 2 diabetes, and death from any cause. Association is the operative word — magnesium-rich diets are built from legumes, seeds, and intact grains, and those foods keep their own healthy company.

Soba noodles supply buckwheat's magnesium and rutin — look for brands that list buckwheat first, since many are mostly wheat. Shelled edamame brings spermidine, magnesium, and complete plant protein. Toasted sesame seeds add still more magnesium plus the dressing's nutty backbone.
