Natto — soybeans fermented with Bacillus subtilis — sits at or near the top of nearly every published table of spermidine content in food, which is the reason this bowl exists. Spermidine is a polyamine that triggers autophagy, the cell's recycling and quality-control program, and feeding it to yeast, worms and flies extended their lifespans (Nature Cell Biology, 2009). In aged mice, adding spermidine to drinking water improved heart function and modestly extended life (Nature Medicine, 2016). Those are animal results; nobody has run that experiment in people, and culinary doses are smaller than what the mice got.

The human evidence is observational but genuinely interesting. In the Bruneck study, which followed around 800 Italian adults for two decades, participants with the highest dietary spermidine intake had lower all-cause mortality than those with the lowest — a gap the authors compared to being several years younger (The American Journal of Clinical Nutrition, 2018). People who eat natto and wheat germ differ from people who do not in plenty of other ways, so read that as supportive, not proof. The fermentation angle has its own trial: a Stanford randomized study found that a diet high in fermented foods increased gut microbiome diversity and lowered a panel of inflammatory markers over ten weeks (Cell, 2021).

Why this works

Natto supplies the spermidine payload plus live Bacillus cultures, making it one of the few foods that shows up in both the polyamine literature and the fermented-food literature. Pasture-raised eggs add choline, an essential nutrient most adults under-consume, needed for cell-membrane phospholipids and methylation (Nutrition Reviews, 2009) — the yolk is the point, so keep it jammy. Avocado brings more potassium than a banana along with monounsaturated fat, short-grain brown rice keeps the grain intact rather than refined, and scallions, tamari and toasted sesame seeds make the whole thing taste like a Tokyo breakfast rather than a supplement stack.

How to make it

  1. Rinse 1 cup short-grain brown rice and cook it in 2 cups water at a bare simmer, covered, about 40 minutes; rest 10 minutes off the heat.
  2. Lower 2 eggs into boiling water for 6½ minutes, then move them straight to ice water; peel once cool enough to handle.
  3. Stir 2 packs of natto vigorously with their sauce packets — or 2 teaspoons tamari and a dab of hot mustard — until frothy. The stickiness is normal, and stirring mellows the aroma.
  4. Divide the rice between two bowls and top each with natto, half a sliced avocado and a halved jammy egg.
  5. Finish with sliced scallions, a generous pinch of toasted sesame seeds and a few extra drops of tamari.

Serves 2. If natto's texture is new to you, start with one pack stirred thoroughly into hot rice — heat softens both the smell and the pull, and the avocado and egg round off the edges.

The takeaway. Natto is the most concentrated common food source of spermidine, and the human evidence, while observational, points the right way. A savory breakfast habit is a low-cost, reasonable bet — not a proven intervention.
