Chilled buckwheat soba in a matcha-sesame dressing, topped with raw broccoli sprouts and edamame — green-tea catechins, glucoraphanin and a measure of spermidine in one cold bowl.

Matcha is green tea leaf milled whole, so a gram of it delivers more catechins — including EGCG, the most-studied of them — than a strained infusion leaves behind. The cornerstone human data come from the Ohsaki cohort, which followed more than 40,000 Japanese adults for 11 years and found that those drinking five or more cups of green tea a day had lower cardiovascular mortality, with the strongest signal for stroke in women (JAMA, 2006). It is observational: heavy tea drinkers in Japan differ from non-drinkers in income, smoking and much else, and whisking matcha into a noodle dressing has never been tested against anything. The catechin dose here is real but modest.
The green topping is doing separate work. Three-day broccoli sprouts carry 10 to 100 times the glucoraphanin of mature broccoli (Proceedings of the National Academy of Sciences, 1997), and a randomized trial of a sprout beverage in Qidong, China showed rapid, sustained increases in the urinary excretion of air-pollutant conjugates (Cancer Prevention Research, 2014) — human biomarker evidence that the Nrf2 detoxification pathway responds to food. Edamame, being immature soybeans, adds a measure of spermidine, the polyamine whose higher intake tracked with lower 20-year mortality in the Bruneck cohort (The American Journal of Clinical Nutrition, 2018).
Everything sulforaphane-related in this bowl stays raw: heat destroys myrosinase, so the broccoli sprouts go on cold, at the end, and get chewed rather than admired. Matcha disperses into the sesame–rice vinegar dressing without brewing — culinary grade is fine and cheaper. Soba brings buckwheat's fiber and rutin, edamame the protein and spermidine, and cucumber the crunch that makes a cold noodle bowl feel like lunch instead of theory.
