Charred broccoli for flavor, raw broccoli sprouts for working myrosinase: this bowl splits the sulforaphane job in two, layered over farro and crisp chickpeas with a garlicky lemon-tahini sauce.

The reason broccoli sprouts appear in a bowl that already contains a full head of broccoli is a 1997 finding that three-day-old sprouts contain 10 to 100 times the glucoraphanin — sulforaphane's precursor — of the mature vegetable (Proceedings of the National Academy of Sciences, 1997). Sulforaphane is the most potent known dietary inducer of the Nrf2 pathway, the transcriptional program that switches on the cell's own antioxidant and detoxification enzymes. In a randomized trial in Qidong, China, a broccoli-sprout beverage rapidly and durably increased urinary excretion of benzene and acrolein conjugates (Cancer Prevention Research, 2014) — direct evidence the pathway engages in living humans. What that trial measured was biomarkers, not disease; the outcome gap is worth stating plainly.
The rest of the bowl runs on steadier evidence. Higher fiber intake — the kind farro and chickpeas supply — was associated with 15–30% reductions in all-cause and cardiovascular mortality across a landmark series of systematic reviews (The Lancet, 2019). Lemon contributes the citrus flavanone hesperidin, which improved endothelial function in a randomized crossover trial — though that trial used orange juice in healthy middle-aged men (American Journal of Clinical Nutrition, 2011), so treat the lemon-tahini connection as directional rather than demonstrated. Garlic's meta-analytic story is modest blood-pressure lowering, mainly in hypertensives (BMC Cardiovascular Disorders, 2008).
Charring broccoli at high heat builds flavor but destroys myrosinase, the enzyme that makes sulforaphane. The raw broccoli sprouts scattered on top solve this: they carry both fresh glucoraphanin and working enzyme, so chew them well and add them only after plating. Farro and crisped chickpeas deliver the fermentable fiber, tahini and lemon make the sauce, and raw crushed garlic in the dressing keeps its allicin intact where the roasting pan would have erased it.
